Heat some oil in the pot and slowly fry some chipped potatoes.

Season some sliced onion with lots of black pepper.

Before they brown, remove the chips and set aside.

Add the meat (Fish, Chicken or Beef) to the pot.

Remove the meat when browned.

Fry the onions with some tomato puree and slowly add some ripe tomatoes mashed with water.

Add some aubergine slices and mixed vegetables.

Add large pieces of sweet potato and cassava.

Add more water and some salt.

Add a large piece of white cabbage.

Bring to the boil.

Add the meat and boil with the contents of the pot.

When the meat is tender, remove it again.

Put the washed Saddam rice (the grains of this rice are broken into small pieces) into the pot.

Add Jumbo (or a vegetable stock cube) and some more water.

Stir and cover.

Simmer, adding more water if needed, until the rice is cooked.

Add the meat and the chips and allow them to reheat.

Turn the contents of the pot removing the meat, chips and large pieces of vegetable.

Once everything is out and the rice is well mixed, place the meat, chips and vegetables on top and serve.
